Turkey Sandwich Recipe
Well Thanksgiving has come and gone and if you’re like me, you probably still have some leftovers taking up valuable space in the fridge. Well, this next panini recipe is not only a tasty sandwich, but it’ll also help use up some of those Thanksgiving leftovers before they go bad. I call this turkey sandwich recipe the Thanksgiving Panini.
Lets start with the only ingredient that you might not have leftover from Thanksgiving, the bread. Not many people serve up a nice crusty loaf of bread on turkey day and a lot of you even opt for biscuits or dinner rolls. They aren’t going to help you make a Thanksgiving Panini. You’ll need an round peasant loaf cut into slices or as with most of my recipes, some ciabatta bread or ciabatta rolls would work great too.
Next ingredient is turkey. You can use white meat or dark meat or even add some of each to this panini. It’s up to you. This year for Thanksgiving dinner in my house we had a small crowd of only 6 adults so we ordered one of those smoked turkeys that Oprah raved about on her show and we’re glad we did. It was an excellent bird. It’s juicyness rivaled the deep fried turkey that I usually make, plus it that great smoky flavor will taste great on our panini.
Stuffing is another big leftover in our house. So onto the sandwich it goes. In my Thanksgiving Panini, I’m using a sausage and apple cornbread stuffing. Stuffing tastes even better when it’s leftover. I think it’s because the ingredients have more time to mix together.
Then slather the ingredients with gravy. Add a little more than you would to a non-panini style sandwich. Don’t worry the heat and the panini grill will press everything together.
A few minutes in the panini grill and the bread become crusty and have those grill marks on it. And there you have it, Thanksgiving Panini. It’s my favorite turkey sandwich recipe.
