Sausage and Apples

Some of the best stuffings that you can eat on Thanksgiving are made with sausages and apples.  So why not try a panini sandwich with the same ingredients?

Sausage, Onions and Apple Panini

  • Sour dough bread
  • Italian sweet sausage
  • Grilled onions
  • Sliced Granny Smith Apples

Now when you’re making good stuffing you’re probably going to use corn bread but I don’t recommend making a panini with corn bread.  Most of the time the corn bread will be too soft and probably crumble up when it’s put in the panini maker.  You can try it if you like but I’m thinking that a hearty sour dough loaf would be a great choice for this sandwich.

For the sausage, I like to use an Italian Sweet Sausage with no fennel.  Hot sausage may not go great with the apples but try it if it sounds appealing to you.  If you have some leftover sausage that you cooked on the BBQ then definitely use that.  If not, then grill it up on your panini press.  Remember to put something in place to catch the dripping.  There’s nothing worse that sausage grease all over your counter.

Be sure to grill some onions for this panini recipe.  A Vidalia Onion or a Spanish Onion is a great choice.  Red onion or chopped green onions just won’t work too well or taste too good.

Now for the apple, I like to go with the tangy and tart Granny Smith Apple.  Since you probably don’t want to bite into an apple peal while eating your panini, you should peel the apples before putting them on the sandwich.

Place all the ingredients on a nice thick slice of the sour dough bread and put it on a hot panini grill.  This panini should be pressed for about 5 minutes so that the flavors blend together.
