Buffalo Chicken Recipe

In my quest to make my brown bag lunch exciting, I have tried many different kinds of panini sandwiches.  Today I’d like to talk about a spicy sandwich that is very exciting, the buffalo chicken panini.

Buffalo Chicken Panini:

  • Chicken
  • Hot Sauce
  • Blue Cheese Dressing
  • Bread or a wrap
  • Chopped Celery (optional)

The first thing you’ll need to make this sandwich is chicken.  Since my lunchtime panini are usually made with leftovers, getting some cooked chicken isn’t a problem.  Whenever we take a trip to Costco, we’ll usually bring back a rotisserie chicken for dinner that evening.  Leftover rotisserie chicken is great for this recipe.  Just pull the meat from the bones and set it aside in a bowl.  Chicken cutlets are perfect also, just chop them into bite sized pieces.

The buffalo wing sauce is very important if you want to cook this panini.  I always use Anchor Bar Original Buffalo Wing Sauce.  The Anchor Bar is where Buffalo Chicken Wings were first created.  And the sauce is really good.  It’s available on Amazon but thankfully, I have a sister who lives in Buffalo and she usually gives me a few bottles for Christmas.  In a pinch, you can also use a regular hot sauce that’s available at the supermarket.

Sometimes I like to put a wrap into the panini maker.  It isn’t really a panini but it’s just as tasty.  A wrap comes out of the grill nice and hot with a nice crunchy grill marks.  You can use a wrap or a good crusty loaf of bread for this recipe.  Try it both ways and see what you like better.

Sometimes when I’m in the mood for a little more crunch in the sandwich I’ll add some chopped celery.  It goes great with Buffalo Wings so why not add it to our Buffalo Panini.

Finally top the ingredients with your favorite blue cheese dressing.  If you want to go the extra yard, get some real crumbled blue cheese to add to your sandwich.  You won’t be sorry.

The key to making good panini is experimentation.  Try something basic and then build on it.  And if you like Buffalo Wings, then a Buffalo Chicken Panini is a great sandwich to build on.
